Waste management and disposal.

In the event of there being left over food at events, we deliver (where appropriate) to several not-for-profit drug rehabilitation and homeless ‘drop-in’ centers in Fitzroy.

Food scraps from preparation either go home with our chefs for their chickens or into our compost.

We order all food for delivery daily. This allows us to order specific amounts and minimize our raw wastage as well as ensure the freshest ingredients for our customers. Whilst we order in bulk to avoid excess packaging, we have almost no food wastage as we use all off cuts of meats and vegetables into items like stocks, chutneys, pickles etc.

In-house compost and extensive recycling program.

We have an extensive inhouse recycling program with our own compost, glass, cardboard, oil, metal, soft and hard plastics all going to different recycling centers for appropriate re-purposing.

Our compost is shared between our team and  local landscape gardeners.

Locally handmade ceramic platters.

Our cocktail platters are hand made by a local ceramicist who engraves our names down the side of the platters. These platters are very dear to us and whilst they are expensive to have made, with good care, can last a long time.

Our lunch platters are very large bright coloured enamel platters. Some of these are over twenty years old. Every few years we strip them back by hand and re-coat them to avoid purchasing new ones. We do not use plastic ‘single use’ platters.

GreenMark 100% recycled, compostable service ware.

For our events, we either serve with china or ‘GreenMark’ 100% recycled, biodegradable and domestically compostable tableware (plates, cups, forks, bowls etc).

The GreenMark range not only utilizes annually renewable plant fibers such as sugarcane and corn, but also reduces the general waste stream. The plates and bowls are made out of bagasse which is an agricultural waste.

The manufacturing process of GreenMark products uses less energy and emits less pollution than petroleum based products. It also generates fewer greenhouse gases and contains no toxins.

If you are unable to compost the service ware at your premises, we will collect the used plates/bowls/wooden forks etc. after the event and compost them back at our kitchen.

(Certification: GreenMark products comply with ASTM D6868 and EN13432 reports for compostability and are ISO 9001 and ISO 14000 certified.)

Everything made in-house.

We do not buy any products in from third parties par made or frozen. Often these products are manufactured overseas and have high food miles and often extra added ingredients to preserve and control the products for transport.

We make all breads, stocks, preserves, sauces etc. in house. This way we have total control of the end product’s freshness, flavour and can easily tailor to different events. (And it’s a more enjoyable way to cook!)

We often design menus which are plant based or completely vegan. We have always had a strong vegetarian representation in our food as this is universally enjoyable and is easier on the planet in terms of water usage, crop areas and methane production.
